Ingredients
  

  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 cups cubed day-old bread
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 pound cooked breakfast sausage or bacon
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 tablespoon butter (for greasing)

Instructions
 

  • Grease a baking dish with butter.
  • Spread cubed bread evenly in the dish.
  • Layer cooked sausage or bacon over the bread.
  • Add onions and bell peppers.
  • Sprinkle cheddar and mozzarella cheese on top.
  • Whisk eggs, milk, salt and pepper in a bowl.
  • Pour the mixture evenly over the casserole.
  • Cover the dish and refrigerate it overnight.
  • Preheat the oven to 350°F (175°C) in the morning.
  • Bake for 45 minutes or until golden and set.
  • Allow it to rest for 10 minutes before serving.

Notes

  • Day-old bread absorbs liquid better.
  • You can swap sausage with ham or turkey.
  • Add spinach or mushrooms for more veggies.
  • Use whole milk for a richer taste.
  • Leftovers store well for up to four days.
