Breakfast Rounds are baked oat-based discs made with dried fruits, nuts, seeds, and natural sweeteners. They are filling, easy to prepare, and ideal for a grab-and-go breakfast or snack.

Ingredients
  

  • 2 cups rolled oats
  • ½ cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup honey or maple syrup
  • ¼ cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup dried fruits (raisins, cranberries, or apricots)
  • ¼ cup chopped nuts (almonds, walnuts, or pecans)
  • 2 tablespoons seeds (chia, flax, or sunflower)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix oats, flour, baking powder, cinnamon, and salt in a bowl.
  • In another bowl, whisk honey, coconut oil, egg, and vanilla.
  • Combine wet and dry ingredients until blended.
  • Stir in dried fruits, nuts, and seeds.
  • Scoop mixture into rounds on the baking sheet.
  • Bake for 18–20 minutes until golden brown.
  • Cool on a wire rack before storing.

Notes

  • Use parchment paper to prevent sticking.
  • Store in an airtight container for up to 5 days.
  • Add chocolate chips for a kid-friendly version.
  • Substitute gluten-free flour for a GF option.
  • Freeze extra rounds for longer storage.
