- 2 cups rolled oats
- ½ cup whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup honey or maple syrup
- ¼ cup coconut oil, melted
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup dried fruits (raisins, cranberries, or apricots)
- ¼ cup chopped nuts (almonds, walnuts, or pecans)
- 2 tablespoons seeds (chia, flax, or sunflower)
Preheat oven to 350°F (175°C) and line a baking sheet.
Mix oats, flour, baking powder, cinnamon, and salt in a bowl.
In another bowl, whisk honey, coconut oil, egg, and vanilla.
Combine wet and dry ingredients until blended.
Stir in dried fruits, nuts, and seeds.
Scoop mixture into rounds on the baking sheet.
Bake for 18–20 minutes until golden brown.
Cool on a wire rack before storing.
