- 1 tablespoon unsalted butter
- ½ teaspoon vanilla extract, optional
- Pinch of salt
- ¾–1 cup chocolate sprinkles, for coating
- Extra butter, for greasing hands
Combine the Ingredients
Place the sweetened condensed milk, cocoa powder, butter, and a small pinch of salt in a heavy-bottomed saucepan.Whisk everything together until the cocoa powder is completely incorporated and no dry lumps remain.
Cook the Mixture
Place the saucepan over low to medium-low heat. Stir continuously with a wooden spoon or heat-resistant spatula. As the mixture heats, it will gradually become thicker and creamier.
Add Vanilla
Remove the pan from the heat and stir in vanilla extract if using.Mix thoroughly until smooth and glossy.
Cool
Transfer the mixture to a lightly buttered plate or shallow dish. Spread it into an even layer.Allow it to cool to room temperature, then refrigerate for approximately 20–30 minutes until firm enough to handle.
Coat with Sprinkles
Roll each chocolate ball through the sprinkles until completely coated.Place the finished Brigadeiros in small paper candy cups if desired.
Serve
Brigadeiros can be served immediately or refrigerated until ready to enjoy. For the best texture, allow refrigerated Brigadeiros to sit at room temperature for a few minutes before serving.
- Low heat is important: Cooking over high heat can cause the mixture to scorch.
- Constant stirring: Keep stirring to prevent the condensed milk from sticking.
- Cocoa powder: Unsweetened cocoa powder gives the best chocolate balance.
- Texture: Properly cooked Brigadeiro should be thick but soft and fudgy.
- Cooling: Chill the mixture before rolling to make shaping easier.
- Greased hands: A little butter prevents the mixture from sticking to your palms.
- Sprinkles: Traditional chocolate sprinkles provide the classic appearance.
- Storage: Keep finished Brigadeiros refrigerated in an airtight container.
