Make the colored gelatin:Prepare each flavored gelatin separately according to the package directions (using less water if you want firmer cubes). Pour each into a shallow dish and refrigerate until firm (about 3–4 hours).
Cut into cubes:Once set, cut each color into small cubes and gently mix them together in a large bowl.
Prepare the creamy gelatin base:Sprinkle the unflavored gelatin over ¼ cup cold water and let it sit for 5 minutes.Add 1 cup boiling water and stir until completely dissolved.Stir in pineapple juice (or cold water). Let cool to room temperature. Make the cream mixture:In a large bowl, whip the cream with sugar and vanilla until soft peaks form. Gently fold in the cooled unflavored gelatin mixture until smooth.
Combine and chill:Gently fold the colorful gelatin cubes into the creamy mixture. Pour into a 9x13-inch dish, mold, or bowl. Smooth the top and refrigerate until firm—at least 4 hours or overnight.
