Ingredients
  

For the Cookies:

  • 2 ½ cups all-purpose flour
  • 1 cups unsalted butter, softened
  • 1 cups light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp salt
  • ½ tsp baking powder

For the Decorations (Optional):

  • Royal icing or melted chocolate
  • Food coloring
  • Sprinkles

Instructions
 

Step 1: Make the Cookie Dough

  • In a large bowl, cream together butter and brown sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
  • In a separate bowl, whisk together the flour, salt, and baking powder.
  • Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.

Step 2: Chill the Dough

  • Divide the dough in half, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 3: Roll & Cut Shapes

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll out the dough to about ¼-inch thickness and cut out shapes using cookie cutters.

Step 4: Bake

  • Place cookies on the prepared baking sheet and bake for 10-12 minutes or until edges are lightly golden.
  • Allow cookies to cool completely before decorating.

Step 5: Decorate (Optional)

  • Use royal icing, melted chocolate, or sprinkles to decorate your cookies.
  • Let the icing set before serving or storing.

Notes

  • For a deeper molasses flavor, use dark brown sugar instead of light brown sugar.
  • Make sure the dough is well-chilled before rolling to prevent spreading.
  • Store in an airtight container for up to a week.
