Ingredients
  

  • 1 ½ cups creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 ½ cups powdered sugar
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil

Instructions
 

  • In a large mixing bowl, combine peanut butter, butter, and vanilla extract.
  • Beat until creamy and smooth.
  • Gradually add powdered sugar until a thick dough forms.
  • Roll the mixture into 1-inch balls and place them on a wax paper–lined baking sheet.
  • Chill the balls for about 30 minutes in the refrigerator.
  • Melt chocolate chips with shortening in a microwave or double boiler.
  • Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving the top exposed.
  • Place them back on the tray and refrigerate until the chocolate is set.

Notes

  • Use smooth peanut butter for the best texture.
  • Chill the peanut butter balls before dipping to avoid breaking.
  • Avoid overheating the chocolate during melting.
  • Store in an airtight container to maintain freshness.
  • Let them rest at room temperature for a few minutes before serving.
