- 1 ½ cups creamy peanut butter
- ½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 ½ cups powdered sugar
- 12 ounces semi-sweet chocolate chips
- 2 tablespoons shortening or coconut oil
In a large mixing bowl, combine peanut butter, butter, and vanilla extract.
Beat until creamy and smooth.
Gradually add powdered sugar until a thick dough forms.
Roll the mixture into 1-inch balls and place them on a wax paper–lined baking sheet.
Chill the balls for about 30 minutes in the refrigerator.
Melt chocolate chips with shortening in a microwave or double boiler.
Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving the top exposed.
Place them back on the tray and refrigerate until the chocolate is set.
