Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 1 cup cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ½ cup cream cheese, softened
  • ½ cup ranch dressing
  • ¼ cup buffalo wing sauce
  • 1 tbsp butter
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a medium baking dish.
  • Cook the cauliflower. Steam or boil cauliflower florets for 5–6 minutes until just tender. Drain well.
  • Make the sauce. In a bowl, whisk cream cheese, ranch dressing, buffalo sauce, melted butter, and garlic powder until smooth.
  • Assemble the casserole. Combine cauliflower with half the bacon and cheddar cheese. Pour sauce over and stir to coat.
  • Top and bake. Transfer mixture to the baking dish, sprinkle remaining cheese and bacon on top. Bake for 20–25 minutes until bubbly and golden.
  • Garnish and serve. Sprinkle with fresh parsley and enjoy hot.
