Ingredients
  

  • 1 lb elbow macaroni (or pasta of choice)
  • 2 cups cooked, shredded chicken
  • ½ cup buffalo sauce
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 4 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • ½ cup blue cheese crumbles (optional)
  • Fresh parsley for garnish

Instructions
 

  • Cook pasta according to package directions. Drain and set aside.
  • Toss shredded chicken with buffalo sauce until evenly coated.
  • In a saucepan, melt butter. Whisk in flour to form a roux.
  • Slowly add milk, whisking until smooth and thickened.
  • Stir in cream cheese, cheddar, mozzarella, and seasonings. Cook until creamy.
  • Combine pasta, buffalo chicken, and cheese sauce in a large bowl. Mix well.
  • Transfer to a greased baking dish. Top with extra cheese.
  • Bake at 375°F (190°C) for 20 minutes until golden and bubbly.
  • Garnish with parsley and serve hot.

Notes

  • Use rotisserie chicken for convenience.
  • Adjust buffalo sauce to your spice preference.
  • Add blue cheese crumbles for authentic buffalo flavour.
  • Make it creamier by adding extra cream cheese.
  • Leftovers can be reheated with a splash of milk.
