- 1 lb elbow macaroni (or pasta of choice)
- 2 cups cooked, shredded chicken
- ½ cup buffalo sauce
- 4 tbsp unsalted butter
- ¼ cup all-purpose flour
- 4 cups whole milk
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup cream cheese, softened
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- ½ cup blue cheese crumbles (optional)
- Fresh parsley for garnish
Cook pasta according to package directions. Drain and set aside.
Toss shredded chicken with buffalo sauce until evenly coated.
In a saucepan, melt butter. Whisk in flour to form a roux.
Slowly add milk, whisking until smooth and thickened.
Stir in cream cheese, cheddar, mozzarella, and seasonings. Cook until creamy.
Combine pasta, buffalo chicken, and cheese sauce in a large bowl. Mix well.
Transfer to a greased baking dish. Top with extra cheese.
Bake at 375°F (190°C) for 20 minutes until golden and bubbly.
Garnish with parsley and serve hot.
