Bulgogi Beef is a classic Korean-style barbecue dish made with thinly sliced, tender beef marinated in a sweet and savory sauce. The flavorful marinade combines soy sauce, garlic, sesame oil, ginger, and a touch of sweetness. After marinating, the beef is cooked quickly over high heat until beautifully caramelized. The result is juicy, tender, and packed with delicious Korean-inspired flavor. Serve it with rice, lettuce wraps, kimchi, and your favorite Korean side dishes.

Ingredients
  

For the Beef

  • 500 g thinly sliced beef, such as ribeye or sirloin
  • 1 medium onion, thinly sliced
  • 2 spring onions, chopped
  • 1 tablespoon sesame seeds

For the Bulgogi Marinade

  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, finely minced
  • 1 teaspoon freshly grated ginger
  • ½ small pear or apple, grated
  • ½ teaspoon black pepper
  • 1 teaspoon sesame seeds

Instructions
 

Prepare the Beef

  • Slice the beef as thinly as possible. Slightly freezing the meat for 20–30 minutes before slicing can make this easier.

Make the Marinade

  • In a large bowl, combine soy sauce, brown sugar, honey, sesame oil, garlic, ginger, grated pear or apple, mirin, black pepper, and sesame seeds.

Marinate the Beef

  • Add the thinly sliced beef and onions to the marinade. Mix thoroughly so that every piece of beef is well coated.

Refrigerate

  • Cover the bowl and refrigerate for at least 1 hour. For deeper flavor, marinate the beef for up to 4 hours.

Preheat the Pan or Grill

  • Heat a grill, cast-iron skillet, or griddle over high heat. Lightly oil the surface if necessary.

Cook the Beef

  • Cook the beef in small batches to prevent overcrowding. Cook for approximately 2–3 minutes per batch until the edges are caramelized and the beef is cooked through.

Garnish

  • Sprinkle the cooked Bulgogi Beef with chopped spring onions and sesame seeds.

Serve

  • Serve immediately with steamed rice, lettuce leaves, kimchi, and other Korean side dishes.

Notes

  • Ribeye is an excellent choice because of its tenderness and rich flavor.
  • Slice the beef very thinly for quick and even cooking.
  • Do not marinate the meat for excessively long periods, as the texture may become too soft.
  • Pear or apple adds natural sweetness and helps tenderize the meat.
  • Cook the beef in batches to achieve better caramelization.
  • A hot grill or skillet is essential for authentic Korean barbecue flavor.
  • Adjust the sweetness according to your personal preference.
  • Serve Bulgogi immediately for the best texture and flavor.
