Ingredients

  • 4 cups popped popcorn
  • 3 cups crispy rice cereal
  • 2 cups mini pretzels
  • 1½ cups white chocolate chips or melting wafers
  • ½ cup pastel-colored candy-coated chocolates
  • ½ cup pastel marshmallows, optional
  • ¼ cup Easter-themed sprinkles
  • ¼ cup chopped nuts, optional
  • 2 tablespoons powdered sugar, optional

Instructions

Prepare the Snack Mix

  • Line a large baking sheet with parchment paper or wax paper.
In a very large bowl, combine the popcorn, crispy rice cereal, and mini pretzels.
Add the pastel marshmallows if using.

Melt the White Chocolate

  • Place the white chocolate chips or melting wafers in a microwave-safe bowl.
Microwave in 15–20 second intervals, stirring thoroughly after each interval until smooth.
Be careful not to overheat the chocolate.

Coat the Snack Mix

  • Pour the melted white chocolate over the popcorn, cereal, and pretzels.
Using a large spatula, gently fold everything together until the mixture is lightly coated.
Work gently so the popcorn and cereal don't become crushed.

Spread Out the Mixture

  • Transfer the coated mixture to the prepared baking sheet.
Spread it into an even layer.

Add the Decorations

  • Immediately sprinkle the pastel candy-coated chocolates, Easter sprinkles, mini chocolate chips, and any additional decorations over the mixture.
Gently press some of the candies into the chocolate before it sets.

Allow It to Set

  • Leave the Bunny Bait at room temperature for approximately 20–30 minutes, or until the chocolate has completely hardened.
For quicker setting, place the tray in the refrigerator for about 10–15 minutes.

Break into Pieces

  • Once firm, gently break the snack mix into bite-sized clusters.
If desired, dust lightly with powdered sugar for a snowy finish.

Serve

  • Transfer the Bunny Bait to a large serving bowl or divide it into individual bags or containers.

Notes

  • Use plain popcorn rather than heavily buttered popcorn for better flavor balance.
  • Choose fresh popcorn for the best crunch.
  • White chocolate melts quickly, so heat it gently.
  • Don't add the candy too early or the colors may become less vibrant.
  • Allow the chocolate to set completely before breaking the mixture apart.
  • Use pastel colors for a classic Easter appearance.
  • Avoid adding wet ingredients, which can make the snack mix soggy.
  • Store in an airtight container to preserve its crunch.
