Ingredients
  

  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or whole milk
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • Croutons or toasted bread, for serving

Instructions
 

Melt the Butter

  • Melt the butter in a large saucepan over medium heat. Keep the heat moderate to prevent the butter from browning or burning.

Sauté the Aromatics

  • Add the chopped onion and cook for 3–4 minutes until soft. Stir in the garlic and cook for another 30 seconds until fragrant.

Add the Potatoes and Broth

  • Add the diced potatoes, broth, thyme, salt, and black pepper. Stir well and bring the mixture to a gentle boil.

Simmer Until Tender

  • Reduce the heat and simmer for 15–20 minutes, or until the potatoes are completely tender when pierced with a fork.

Blend the Soup

  • Use an immersion blender to blend until smooth. Alternatively, carefully blend in batches using a countertop blender. Leave some potato pieces unblended if you prefer a rustic texture.

Add the Cream

  • Stir in the cream or milk. Warm gently for 2–3 minutes without allowing the soup to boil vigorously.

Taste and Garnish

  • Adjust the seasoning as needed. Sprinkle with fresh parsley and add crunchy croutons or a small swirl of cream.

Serve Warm

  • Ladle into warm bowls and serve immediately with toasted bread, crackers, or a fresh green salad.
