Ingredients

For the Crumb Topping

  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed

For the Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1½ cups diced ripe mango
  • 1 cup fresh blueberries
  • ½ cup fresh raspberries or strawberries

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line a 9-inch square baking pan or round cake pan with parchment paper.
  • Prepare the crumb topping by mixing flour, brown sugar, cinnamon, and salt. Cut in the cold butter until coarse crumbs form. Set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, beat the softened butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla extract.
  • Gradually add the dry ingredients, alternating with buttermilk. Mix until just combined.
  • Gently fold in the diced mango and berries, being careful not to crush the fruit.
  • Spread the batter evenly into the prepared pan.
  • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the cake for at least 20 minutes before slicing.
  • Dust with powdered sugar or drizzle with vanilla glaze before serving.

Notes

  • Use ripe but firm mangoes for the best flavor.
  • Fresh berries provide the best texture and color.
  • Frozen berries can be used without thawing.
  • Do not overmix the batter to keep the cake tender.
  • Buttermilk helps create a soft and moist crumb.
  • Allow the cake to cool before slicing.
  • Store leftovers in an airtight container.
  • Refrigerate if using fresh fruit toppings.
