- 1 large sweet potato, peeled and cubed
- 1 medium onion, chopped
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup coconut milk or heavy cream
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 teaspoon maple syrup, optional
- Toasted pumpkin seeds or chopped parsley, for garnish
Heat the olive oil and butter in a large pot over medium heat.
Add the chopped onion and cook until soft and translucent.
Stir in the garlic and grated ginger, and cook for 1 minute until fragrant.
Add the cubed butternut squash and sweet potato to the pot.
Pour in the broth and stir in cinnamon, nutmeg, salt, and black pepper.
Bring the mixture to a boil, then reduce the heat and simmer for 25 to 30 minutes, or until the vegetables are completely tender.
Remove from the heat and blend the soup until perfectly smooth using an immersion blender or countertop blender.
Return the bisque to low heat and stir in the coconut milk or cream.
Add maple syrup if desired and finish with lemon juice or apple cider vinegar for balance.
Taste and adjust seasoning, then serve hot with garnish.
- Sweet potato makes the bisque naturally creamy and slightly sweeter.
- Fresh ginger gives the soup brightness and gentle warmth.
- Coconut milk creates a dairy-free, silky finish.
- Heavy cream adds a more traditional rich bisque texture.
- The soup can be made thicker or thinner by adjusting the broth.
- A touch of acid at the end balances the sweetness beautifully.
- This bisque is excellent for make-ahead meals and holiday menus.
- It tastes even better after the flavors have rested for a few hours.
