Ingredients
  

  • 4 large potatoes, peeled and diced
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp red pepper flakes (optional, for extra heat)
  • ½ cup shredded cheddar cheese (for garnish)
  • ¼ cup chopped green onions (for garnish)

Instructions
 

  • Prepare the Ingredients:
    Peel and dice the potatoes, slice the sausage, and chop the vegetables.
  • Cook the Sausage:
    In a large pot, heat butter over medium heat and sauté the sausage until browned. Remove and set aside.
  • Sauté the Vegetables:
    In the same pot, add onion, garlic, and red bell pepper. Cook until softened.
  • Make the Roux:
    Sprinkle flour over the vegetables and stir for 1-2 minutes to create a thick base.
  • Simmer the Soup:
    Pour in chicken broth, add diced potatoes, and stir in Cajun seasoning, paprika, salt, and pepper.
    Bring to a boil, then reduce heat and let simmer for 20 minutes until potatoes are tender.
  • Add Dairy and Sausage:
    Stir in heavy cream, milk, and cooked sausage. Let simmer for another 5 minutes.
  • Serve:
    Garnish with shredded cheese and green onions before serving.

Notes

  • Adjust the spice level by increasing or decreasing Cajun seasoning.
  • For a thicker soup, mash some of the potatoes before adding the cream.
