- 1 lb smoked sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 4 cup chicken broth
- 1 cup heavy cream
- 1 cup milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp red pepper flakes (optional, for extra heat)
- ½ cup shredded cheddar cheese (for garnish)
- ¼ cup chopped green onions (for garnish)
Prepare the Ingredients:Peel and dice the potatoes, slice the sausage, and chop the vegetables. Cook the Sausage:In a large pot, heat butter over medium heat and sauté the sausage until browned. Remove and set aside. Sauté the Vegetables:In the same pot, add onion, garlic, and red bell pepper. Cook until softened. Make the Roux:Sprinkle flour over the vegetables and stir for 1-2 minutes to create a thick base.
