For Crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1 ½ cups milk
- 2 tbsp melted butter
- ¼ tsp salt
For Cajun Shrimp Filling:
- 300g shrimp (peeled and deveined)
- 1 tbsp olive oil or butter
- 2 cloves garlic (minced)
- 1 small onion (chopped)
- 1 small bell pepper (chopped)
- 1 tsp Cajun seasoning
- ¼ tsp cayenne pepper (optional)
- Salt and pepper to taste
For Creamy Cajun Sauce:
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- ½ cup heavy cream
- ½ cup grated cheese (cheddar or Parmesan)
- Fresh parsley (for garnish)
Whisk flour, eggs, milk, butter, and salt into a smooth batter.Heat a non-stick pan and pour a thin layer of batter.
Cook each side for 1–2 minutes until lightly golden.Set aside.
Heat oil or butter in a pan.Sauté garlic and onion until fragrant.Add bell pepper and cook until slightly soft.
Add shrimp and sprinkle Cajun seasoning, paprika, and cayenne.Cook until shrimp turn pink and are just done.Remove from heat.
Melt butter in a pan and whisk in flour to form a roux.Gradually add milk and cream, stirring constantly.
Add cheese, lemon juice, salt, and pepper.Cook until smooth and thick.
Mix shrimp with some of the sauce.Spoon filling into each crepe.Roll or fold neatly.
Top with extra sauce and garnish with parsley.
