Ingredients
  

  • 2 large cucumbers, thinly sliced
  • 1 cup imitation crab meat (or real crab, shredded)
  • 1 ripe avocado, diced
  • 1/2 cup cooked sushi rice (optional)
  • 2 tbsp sesame seeds (toasted)
  • 1/4 cup scallions, thinly sliced

For the Dressing:

  • 3 tbsp mayonnaise (or Greek yogurt for a lighter option)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1/2 tsp sriracha (optional for heat)

Instructions
 

  • Prepare the vegetables: Thinly slice the cucumbers and scallions. Dice the avocado and shred the crab meat.
  • Make the dressing: In a small bowl, whisk together mayonnaise, soy sauce, rice vinegar, sesame oil, honey, and sriracha (if using).
  • Assemble the salad: In a large bowl, combine cucumbers, crab meat, avocado, scallions, and sushi rice (if using).
  • Add the dressing: Drizzle the prepared dressing over the salad and gently toss to coat.
  • Garnish and serve: Sprinkle toasted sesame seeds on top and serve immediately or chill for 10 minutes before serving for enhanced flavors.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
  • Fresh crab meat can be substituted for imitation crab for a premium touch.
