Ingredients
  

  • 6 large eggs
  • 4 slices bacon, chopped
  • 2 cups diced potatoes
  • ½ onion, diced
  • 1 bell pepper, chopped
  • ½ cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons chopped parsley

Instructions
 

  • Cook chopped bacon in a large cast iron skillet over medium campfire heat until crispy.
  • Remove bacon and reserve a little bacon grease in the skillet.
  • Add butter and diced potatoes. Cook for 12–15 minutes until golden brown.
  • Stir in onions, bell peppers, and mushrooms. Cook another 5 minutes.
  • Season with garlic powder, smoked paprika, salt, and pepper.
  • Return bacon to the skillet.
  • Create small wells in the potato mixture and crack eggs into each one.
  • Cover the skillet with a lid or foil and cook until eggs reach your preferred doneness.
  • Garnish with chopped parsley and serve immediately with toast, fresh fruit, or hot coffee.
