Clean the Pumpkin Seeds

  • Remove the seeds from a fresh pumpkin and separate them from the pulp. Place the seeds in a bowl of water and gently rub them to remove any remaining pumpkin fibers. Drain thoroughly.

Dry the Seeds

  • Spread the cleaned seeds on a clean kitchen towel or paper towels. Pat them dry and allow them to air-dry for 20–30 minutes if time permits. Removing excess moisture helps the seeds roast evenly and become crispier.

Preheat the Oven

  • Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper to help prevent sticking and make cleanup easier.

Prepare the Seasoning

  • In a medium mixing bowl, combine the olive oil, brown sugar, chili powder, smoked paprika, salt, cinnamon, and cayenne pepper if using. Add the honey or maple syrup for a richer caramelized coating, if desired.

Coat the Pumpkin Seeds

  • Add the dried pumpkin seeds to the seasoning mixture. Stir thoroughly until the seeds are evenly coated. If the mixture is too dry for the sugar and spices to adhere, add a small amount of water.

Arrange the Seeds

  • Spread the coated seeds in a single layer on the prepared baking sheet. Keep them separated as much as possible to encourage even roasting. Avoid piling them on top of one another.

Roast Until Golden

  • Bake for 20–30 minutes, stirring every 8–10 minutes. Watch carefully toward the end because sugar can burn quickly. The seeds should smell nutty and look lightly golden with a caramelized coating.

Cool and Crisp

  • Remove the baking sheet from the oven and allow the seeds to cool completely. They will become crunchier as they cool. Break apart any clusters and transfer the finished seeds to an airtight container once fully cooled.
