Ingredients

For the Carne Asada:

  • 1½ lbs flank steak or skirt steak
  • ¼ cup fresh lime juice
  • 2 tablespoons orange juice
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

For the Garlic-Lime Sauce:

  • ½ cup mayonnaise
  • 1 tablespoon lime juice
  • 1 small garlic clove, minced
  • 1 tablespoon chopped cilantro
  • Salt to taste

For the Sandwich:

  • 4 crusty sandwich rolls or bolillo rolls
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • ½ red onion, thinly sliced
  • 1 avocado, sliced

Instructions

  • In a bowl, whisk together lime juice, orange juice, garlic, olive oil, cumin, chili powder, smoked paprika, salt, and pepper. Place steak in a resealable bag and pour marinade over it. Refrigerate for at least 1 hour (up to 4 hours).
  • Preheat grill or grill pan to medium-high heat. Remove steak from marinade and grill for 4–6 minutes per side, depending on thickness and desired doneness. Let rest for 10 minutes.
  • Thinly slice steak against the grain for maximum tenderness.
  • Mix mayonnaise, lime juice, garlic, cilantro, and salt until smooth.
  • Toast rolls lightly. Spread garlic-lime sauce on both sides. Layer sliced steak, lettuce, tomato, onion, pico de gallo, and avocado. Add cheese or jalapeños if desired. Serve immediately.

Notes

  • Marinating longer enhances flavor but avoid exceeding 6 hours.
  • Always slice steak against the grain.
  • Skirt steak provides more flavor; flank steak offers leaner texture.
  • Toasting bread prevents sogginess.
  • Resting steak keeps juices intact.
  • Adjust spice level with chili powder.
  • Fresh lime juice gives the best flavor.
  • Use ripe but firm avocado for clean slices.
