For the Carne Asada:
- 1½ lbs flank steak or skirt steak
- ¼ cup fresh lime juice
- 2 tablespoons orange juice
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
For the Garlic-Lime Sauce:
- ½ cup mayonnaise
- 1 tablespoon lime juice
- 1 small garlic clove, minced
- 1 tablespoon chopped cilantro
- Salt to taste
For the Sandwich:
- 4 crusty sandwich rolls or bolillo rolls
- 1 cup shredded lettuce
- 1 large tomato, sliced
- ½ red onion, thinly sliced
- 1 avocado, sliced
In a bowl, whisk together lime juice, orange juice, garlic, olive oil, cumin, chili powder, smoked paprika, salt, and pepper. Place steak in a resealable bag and pour marinade over it. Refrigerate for at least 1 hour (up to 4 hours).
Preheat grill or grill pan to medium-high heat. Remove steak from marinade and grill for 4–6 minutes per side, depending on thickness and desired doneness. Let rest for 10 minutes.
Thinly slice steak against the grain for maximum tenderness.
Mix mayonnaise, lime juice, garlic, cilantro, and salt until smooth.
Toast rolls lightly. Spread garlic-lime sauce on both sides. Layer sliced steak, lettuce, tomato, onion, pico de gallo, and avocado. Add cheese or jalapeños if desired. Serve immediately.
- Marinating longer enhances flavor but avoid exceeding 6 hours.
- Always slice steak against the grain.
- Skirt steak provides more flavor; flank steak offers leaner texture.
- Toasting bread prevents sogginess.
- Resting steak keeps juices intact.
- Adjust spice level with chili powder.
- Fresh lime juice gives the best flavor.
- Use ripe but firm avocado for clean slices.
