- 2 tbsp olive oil
- 1 pound beef stew meat, cubed
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 green bell pepper, diced
- 2 medium potatoes, peeled and cubed
- 1 can (14 oz) diced tomatoes
- 1/2 cup tomato sauce
- 1/2 cup beef broth
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1 bay leaf
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Cook the Aromatics :
In the same pot, sauté the onion, garlic, and bell pepper until softened, about 3-4 minutes.
Combine Ingredients :
Return the beef to the pot. Stir in the diced tomatoes, tomato sauce, beef broth, cumin, paprika, oregano, and bay leaf. Mix well.
- For a thicker sauce, let the stew simmer uncovered during the last 10 minutes of cooking.
- You can use sweet potatoes instead of regular potatoes for a different flavor.
