Carne con Papas Recipe

A rich and flavorful beef and potato stew, Carne con Papas is a Latin classic that’s hearty and satisfying.

Ingredients
  

  • 2 tbsp olive oil
  • 1 pound beef stew meat, cubed
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 green bell pepper, diced
  • 2 medium potatoes, peeled and cubed
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup tomato sauce
  • 1/2 cup beef broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions
 

Heat the Oil :

  • In a large pot or Dutch oven, heat olive oil over medium heat.

Brown the Beef :

  • Season the beef with salt and pepper, then add it to the pot. Sear until browned on all sides. Remove the beef and set it aside.

Cook the Aromatics :

  • In the same pot, sauté the onion, garlic, and bell pepper until softened, about 3-4 minutes.

Combine Ingredients :

  • Return the beef to the pot. Stir in the diced tomatoes, tomato sauce, beef broth, cumin, paprika, oregano, and bay leaf. Mix well.

Simmer the Stew :

  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25 minutes, stirring occasionally.

Add the Potatoes :

  • Stir in the cubed potatoes. Cover and continue simmering for another 20 minutes, or until the potatoes are tender and the beef is fully cooked.

Adjust Seasoning :

  • Taste the stew and adjust salt and pepper as needed.

Serve :

  • Remove the bay leaf, garnish with fresh cilantro if desired, and serve hot with rice or crusty bread.

Notes

  • For a thicker sauce, let the stew simmer uncovered during the last 10 minutes of cooking.
  • You can use sweet potatoes instead of regular potatoes for a different flavor.
