Ingredients
  

  • 1½ lbs thinly sliced beef (sirloin or flank)
  • 4 slices bacon, chopped
  • 6 tomatillos, husked
  • 2 jalapeños
  • 2 garlic cloves
  • ½ cup cilantro
  • 4 cups beef broth
  • 1½ cups cooked pinto beans
  • ½ onion, chopped (for garnish)
  • Cilantro leaves (for garnish)
  • Lime wedges
  • Salt and pepper to taste

Instructions
 

  • Cook bacon in a pot until crisp; remove and set aside.
  • Add beef to the same pot and sauté until browned.
  • Blend tomatillos, jalapeños, garlic, and cilantro into a smooth salsa.
  • Pour the salsa over the beef and cook for 5 minutes.
  • Add beef broth and simmer for 25–30 minutes.
  • Stir in cooked pinto beans and simmer 5 more minutes.
  • Serve hot topped with bacon, cilantro, onions, and lime juice.
