Ingredients
  

  • 1 lb (450g) ground beef
  • 2 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, chopped
  • ½ cup tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp chili powder (optional)
  • ½ tsp oregano
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • ½ cup beef broth or water
  • Fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onions and garlic, sauté until soft and fragrant.
  • Add ground beef and cook until browned, breaking it up with a spoon.
  • Stir in the chopped tomato, tomato sauce, cumin, paprika, chili powder, oregano, salt, and pepper. Mix well.
  • Add the diced potatoes and beef broth (or water). Stir to combine.
  • Cover and simmer for 20-25 minutes, stirring occasionally, until the potatoes are tender.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh cilantro and serve hot with rice, tortillas, or salad.

Notes

  • For a spicier version, add jalapeño or extra chili powder.
  • If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes.
