- 2 carnival squash
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp maple syrup (optional)
- 1/2 tsp ground cinnamon (optional, for sweet preparation)
- Optional stuffing: cooked quinoa, dried cranberries, chopped walnuts, and feta cheese
Preheat Oven: Preheat your oven to 400°F (200°C). Prepare the Squash:Wash the carnival squash thoroughly. Cut each squash in half lengthwise and scoop out the seeds. Season: Drizzle the inside of each squash half with olive oil. Sprinkle with salt, black pepper, and cinnamon (if preparing sweet squash). Roast: Place the squash halves cut-side up on a baking sheet. Roast in the oven for 35-40 minutes, or until the flesh is tender and easily pierced with a fork. Optional Stuffing:If stuffing, mix cooked quinoa, dried cranberries, chopped walnuts, and feta cheese. Fill each squash half with the mixture and return to the oven for an additional 10 minutes. Serve: Serve warm as a side dish or main course.
