Ingredients
  

  • 2 carnival squash
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp ground cinnamon (optional, for sweet preparation)
  • Optional stuffing: cooked quinoa, dried cranberries, chopped walnuts, and feta cheese

Instructions
 

  • Preheat Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Squash:
    Wash the carnival squash thoroughly. Cut each squash in half lengthwise and scoop out the seeds.
  • Season:
    Drizzle the inside of each squash half with olive oil. Sprinkle with salt, black pepper, and cinnamon (if preparing sweet squash).
  • Roast:
    Place the squash halves cut-side up on a baking sheet. Roast in the oven for 35-40 minutes, or until the flesh is tender and easily pierced with a fork.
  • Optional Stuffing:
    If stuffing, mix cooked quinoa, dried cranberries, chopped walnuts, and feta cheese. Fill each squash half with the mixture and return to the oven for an additional 10 minutes.
  • Serve:
    Serve warm as a side dish or main course.

Notes

  • For a vegan option, omit the feta cheese in the stuffing.
  • Carnival squash can also be pureed and used in soups or baked goods.
