Prepare the Vegetables
Wash the cauliflower thoroughly and cut it into small, evenly sized florets.Peel the potatoes and cut them into approximately ½-inch cubes.Finely chop the onion, dice the carrots and celery, and mince the garlic.
Sauté the Aromatics
Heat the butter or olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.Add the chopped onion, carrots, and celery.Cook for approximately 6–8 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.
Add the Garlic
Add the minced garlic.Cook for another 30–60 seconds, stirring frequently until fragrant.Avoid browning the garlic too much.
Add the Cauliflower and Potatoes
Add the cauliflower florets and cubed potatoes to the pot.Stir well so the vegetables become coated with the aromatic mixture.
Add the Broth and Seasonings
Pour in the vegetable or chicken broth.Add the thyme, black pepper, salt, and bay leaf.Stir everything together.
Simmer the Soup
Bring the soup to a gentle boil.Reduce the heat to medium-low and partially cover the pot.Simmer for approximately 20–25 minutes, or until the cauliflower and potatoes are completely tender.
Remove the Bay Leaf
Turn off the heat.Carefully remove and discard the bay leaf.Allow the soup to cool slightly before blending.
Blend the Soup
Use an immersion blender to blend the soup directly in the pot until smooth and creamy. For a rustic texture, blend only part of the soup and leave some cauliflower and potato pieces intact. If using a countertop blender, blend the soup in small batches and take care when working with hot liquid.
Adjust the Consistency
Check the thickness of the soup.If it is too thick, add a little extra broth or milk.If you prefer a thicker soup, simmer uncovered for several additional minutes.Taste and adjust the salt and black pepper as needed.
Add Fresh Herbs
Stir in the chopped fresh parsley. For additional flavor, add a few fresh thyme leaves just before serving.
Garnish and Serve
Ladle the hot Cauliflower Potato Soup into serving bowls.Garnish with fresh parsley, a drizzle of cream, freshly cracked black pepper, croutons, shredded cheese, or crispy bacon.Serve immediately with warm crusty bread or garlic toast.
- Cauliflower: Fresh cauliflower works best, but frozen cauliflower can also be used.
- Potatoes: Yukon Gold potatoes provide a naturally creamy texture, while russet potatoes make the soup slightly thicker.
- Dairy: Whole milk and cream create a rich soup, but milk alone can be used for a lighter version.
- Broth: Vegetable broth keeps the soup vegetarian, while chicken broth adds extra savory flavor.
- Texture: Blend completely for a silky soup or partially for a rustic chunky consistency.
- Cheese: A little sharp cheddar or Parmesan can be added for extra savory richness.
- Dairy-free: Use olive oil and unsweetened plant-based milk and cream alternatives.
