For the Chana Masala
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 tablespoon ginger, finely chopped or grated
- 4 garlic cloves, minced
- 1–2 green chilies, finely chopped
- 2 medium tomatoes, finely chopped or pureed
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon Kashmiri red chili powder
- ½ teaspoon regular chili powder, optional
- 1 teaspoon garam masala
- ½ teaspoon amchur powder
- ½ teaspoon black pepper
- 1 teaspoon salt, or to taste
Whole Spices
- 1 small bay leaf
- 1-inch cinnamon stick
- 2 green cardamom pods
- 2 cloves
For Garnishing
- 2 tablespoons fresh coriander, chopped
- 1-inch piece fresh ginger, julienned
- 1 green chili, sliced
- Lemon wedges
- Fresh onion rings
- Chaat masala, optional
Prepare the Chickpeas
If using dried chickpeas, rinse them thoroughly and soak them in plenty of water for 8–12 hours.Drain and rinse the soaked chickpeas. Pressure cook them with fresh water and a little salt until tender.If using canned chickpeas, drain and rinse them thoroughly before cooking.
Make the Spice Base
Heat oil in a large heavy-bottomed pan over medium heat.Add cumin seeds, bay leaf, cinnamon, cardamom, and cloves. Sauté for about 30 seconds until fragrant.
Cook the Onion
Add finely chopped onion and sauté until golden brown.This step is important because well-cooked onions create a deeper and richer curry base.
Add Ginger, Garlic, and Chilies
Add ginger, garlic, and green chilies.Cook for 1–2 minutes until the raw aroma disappears.
Cook the Tomatoes
Add chopped or pureed tomatoes.Cook until the tomatoes become soft and the mixture thickens. Continue cooking until the oil begins to separate from the masala.
Add the Spices
Add turmeric, coriander powder, cumin powder, Kashmiri chili powder, optional regular chili powder, black pepper, and salt.Mix well and cook for another 1–2 minutes.If the mixture becomes too dry, add a splash of water.
Finish the Curry
Add garam masala and amchur powder during the final few minutes of cooking.Taste and adjust salt, chili, or tanginess as needed.
Garnish and Serve
Turn off the heat and garnish with fresh coriander, julienned ginger, sliced green chili, and a sprinkle of chaat masala.Serve hot with lemon wedges.
- Soaking dried chickpeas overnight helps them cook more evenly.
