For the Noodles
- 250 g Korean sweet potato glass noodles (dangmyeon)
- 1 tablespoon sesame oil
- 1 teaspoon vegetable oil
For the Vegetables
- 1 medium carrot, julienned
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 150 g shiitake mushrooms, thinly sliced
- 150 g fresh spinach
- 3 green onions, sliced
- 3 cloves garlic, minced
For the Sauce
- 4 tablespoons soy sauce
- 1½ tablespoons toasted sesame oil
- 1½ tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame seeds
- ½ teaspoon black pepper
For Garnishing
- 1 tablespoon toasted sesame seeds
- 2 green onions, thinly sliced
- 1 teaspoon toasted sesame oil
Prepare the Sauce
Combine the soy sauce, toasted sesame oil, brown sugar, rice vinegar, sesame seeds, and black pepper in a small bowl.Whisk thoroughly until the sugar begins to dissolve. Set aside while preparing the noodles and vegetables
Prepare the Vegetables
Wash and prepare all the vegetables. Julienne the carrot, thinly slice the onion and bell peppers, slice the mushrooms, and mince the garlic.Keeping the vegetables similar in size will help them cook evenly.
Cook the Glass Noodles
Bring a large pot of water to a boil. Add the sweet potato glass noodles and cook according to the package instructions, usually for approximately 5–7 minutes.The noodles should be tender but still pleasantly chewy.
Drain and Season the Noodles
Drain the noodles thoroughly and rinse them briefly under cold water.Transfer them to a large bowl and toss with 1 tablespoon sesame oil. If desired, cut the noodles into shorter lengths using kitchen scissors.
Cook the Mushrooms
Heat the vegetable oil in a large skillet or wok over medium-high heat.Add the shiitake mushrooms and cook for 3–4 minutes until tender and lightly browned. Add a little minced garlic and cook for another 30 seconds.Transfer the mushrooms to a large mixing bowl.
Cook the Carrots and Onion
Add the sliced onions and carrots to the same skillet.Stir-fry for approximately 2–3 minutes. Keep the vegetables slightly crisp rather than cooking them until completely soft.
Add the Bell Peppers
Add the red and yellow bell peppers and stir-fry for another 2 minutes.The peppers should remain bright and retain a little crunch.
Combine Everything
Add the cooked glass noodles to the vegetables.Pour the prepared sauce over the noodles and gently toss everything together using tongs until the noodles and vegetables are evenly coated.
Finish and Serve
Taste the Chap Chee and adjust the seasoning if necessary.Transfer to a serving platter and garnish with toasted sesame seeds, sliced green onions, and a small drizzle of sesame oil.Serve warm or at room temperature.
