- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 3 cups chicken or beef broth
- 1 cups carrots, shredded
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ¼ tsp dried mustard (optional)
- 2 cups shredded cheddar cheese
- 2 cups milk
- 2 tbsp butter
- 2 tbsp flour
- ½ cup heavy cream
- ½ tsp Worcestershire sauce (optional)
- ½ tsp teaspoon hot sauce (optional, for a kick)
- Crumbled bacon and chopped green onions for garnish
Step 2: Sauté the Aromatics
Step 3: Add Vegetables and Broth
Stir in potatoes, carrots, broth, salt, pepper, paprika, and mustard. Bring to a boil, then reduce heat and simmer for 15 minutes until the potatoes are tender.
Step 4: Make It Creamy
In a separate bowl, whisk flour into milk until smooth. Slowly pour it into the soup, stirring constantly.
Simmer for another 5-10 minutes until the soup thickens.
