Ingredients
  

  • 12 large eggs
  • 1 pound breakfast sausage, cooked and drained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 3 cups frozen shredded hash browns
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a large baking dish.
  • Cook the sausage until browned. Drain well.
  • Mix eggs, milk, salt and pepper in a bowl.
  • Stir in hash browns, sausage, onions, peppers and cheeses.
  • Pour the mixture into the baking dish.
  • Bake for 45 minutes or until set and golden.
  • Allow it to cool for a few minutes before slicing.

Notes

  • You can swap mozzarella with Swiss cheese.
  • Fresh potatoes may replace frozen hash browns.
