Ingredients
  

  • 4 cups frozen hash browns
  • 6 slices bacon, chopped
  • ½ lb (225 g) breakfast sausage
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese (optional for extra meltiness)
  • 2 tbsp butter or bacon grease
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder (optional)
  • 2 tbsp chopped green onions (for garnish)

Instructions
 

  • In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside.
  • Add the sausage to the same pan and cook until browned; drain excess grease.
  • Add butter or reserved bacon grease to the skillet and spread the frozen hash browns evenly.
  • Season with salt, pepper, and garlic powder. Cook until golden and crispy, about 8–10 minutes.
  • Stir in the cooked sausage and bacon.
  • Make four small wells in the hash browns and crack one egg into each.
  • Cover the skillet and cook until the eggs are set to your liking, 3–5 minutes.
  • Sprinkle cheddar and mozzarella cheese over the top and let melt.
  • Garnish with green onions and serve hot.

Notes

  • Use bacon grease for extra flavor in the hash browns.
  • Keep the heat medium to avoid burning the potatoes.
  • Add vegetables like bell peppers or onions for more color and nutrition.
  • You can scramble the eggs instead of frying them.
