For the Sauce

  • 1 medium butternut squash (about 2½ pounds), peeled and cubed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Salt, to taste
  • 1 cup shredded sharp cheddar cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ cup whole milk or heavy cream
  • 1 tablespoon unsalted butter
  • Fresh parsley or sage, chopped, for garnish

For Serving

  • 1 pound cooked pasta (penne, rigatoni, fusilli, or fettuccine)
  • Extra Parmesan cheese
  • Fresh cracked black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Spread the cubed butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 25–30 minutes, or until tender and lightly caramelized.
  • Meanwhile, heat a tablespoon of olive oil in a large skillet over medium heat. Sauté the onion for about 5 minutes, then add the garlic and cook for 1 minute until fragrant.
  • Add the roasted squash to the skillet along with the vegetable broth, Italian seasoning, thyme, and smoked paprika. Simmer for 5 minutes.
  • Transfer the mixture to a blender or use an immersion blender to puree until completely smooth.
  • Return the sauce to the skillet over low heat.
  • Stir in the butter, milk or cream, cheddar cheese, and Parmesan cheese until melted and creamy.
  • Taste and adjust the seasoning with salt, pepper, and red pepper flakes if desired.
  • Toss the cooked pasta with the sauce until evenly coated.
  • Serve immediately with extra Parmesan cheese and fresh herbs.
