Ingredients
  

  • 4 slices bread cubed
  • 1/4 cup melted butter
  • 2 cup cubed zucchini
  • 1 large onion finely chopped
  • 1 large egg beaten
  • 1 teaspoon garlic salt or to taste
  • 2 cup shredded cheddar cheese

Instructions
 

  • Prep the Zucchini
    Start by slicing the zucchini into thin rounds. Sprinkle some salt on them and let sit for 10 minutes. Pat them dry with a towel to remove excess moisture.
  • Sauté the Aromatics
    Melt butter in a skillet over medium heat. Add onions and garlic. Sauté until they turn golden and soft. Set aside.
  • Mix the Filling
    In a large bowl, beat the eggs. Add sour cream, cheddar, mozzarella, and Parmesan. Stir in the cooked onion mixture, salt, pepper, and oregano. Mix until creamy.
  • Layer the Casserole
    Preheat oven to 375°F (190°C). Grease a baking dish. Layer half the zucchini at the bottom. Pour half the cheese mixture over it. Repeat layers. Sprinkle breadcrumbs on top for a crispy finish.
  • Bake to Perfection
    Place the dish in the oven. Bake uncovered for 30–35 minutes. The top should be golden brown, and the casserole bubbly.
