Ingredients
  

For Chicken Marinade:

  • 1 kg chicken pieces (bone-in)
  • 2 cups buttermilk
  • 1 tbsp hot sauce
  • 1 tsp salt
  • 1 tsp black pepper

For Coating:

  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

For Hot Oil Paste:

  • ½ cup frying oil (from pan)
  • 1–2 tbsp cayenne pepper (adjust to heat level)
  • 1 tbsp brown sugar
  • ½ tsp paprika
  • ½ tsp garlic powder

For Serving:

  • White bread slices
  • Pickles

Instructions
 

  • Mix buttermilk, hot sauce, salt, and pepper. Add chicken and marinate for at least 2 hours.
  • Combine flour, paprika, cayenne, garlic powder, salt, and pepper in a bowl.
  • Remove chicken from marinade and dredge in flour mixture, pressing firmly for a thick coating.
  • Heat oil to 170–175°C (340–350°F) in a deep pan.
  • Fry chicken in batches for 12–15 minutes until golden brown and fully cooked.
  • Carefully mix hot frying oil with cayenne, brown sugar, paprika, and garlic powder.
  • Generously brush the spicy oil over freshly fried chicken.
  • Place chicken on white bread and top with pickles. Serve hot.
