For Chicken Marinade:
- 1 kg chicken pieces (bone-in)
- 2 cups buttermilk
- 1 tbsp hot sauce
- 1 tsp salt
- 1 tsp black pepper
For Coating:
- 2 cups all-purpose flour
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
For Hot Oil Paste:
- ½ cup frying oil (from pan)
- 1–2 tbsp cayenne pepper (adjust to heat level)
- 1 tbsp brown sugar
- ½ tsp paprika
- ½ tsp garlic powder
For Serving:
- White bread slices
- Pickles
Mix buttermilk, hot sauce, salt, and pepper. Add chicken and marinate for at least 2 hours.
Combine flour, paprika, cayenne, garlic powder, salt, and pepper in a bowl.
Remove chicken from marinade and dredge in flour mixture, pressing firmly for a thick coating.
Heat oil to 170–175°C (340–350°F) in a deep pan.
Fry chicken in batches for 12–15 minutes until golden brown and fully cooked.
Carefully mix hot frying oil with cayenne, brown sugar, paprika, and garlic powder.
Generously brush the spicy oil over freshly fried chicken.
Place chicken on white bread and top with pickles. Serve hot.
