- 2 pounds (900 g) cherry tomatoes
- 3 tablespoons extra virgin olive oil
- 1 teaspoon red pepper flakes (optional)
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ½ cup fresh basil leaves, chopped
- ¼ cup grated Parmesan cheese (optional)
- 1 tablespoon butter (optional, for extra richness)
- 12 ounces (340 g) cooked pasta of your choice

Bring a large pot of salted water to a boil and cook the pasta according to the package directions. Reserve ½ cup of the pasta cooking water before draining.
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
Add the cherry tomatoes, salt, and black pepper. Stir well to coat them in the oil.
Cook for 12–15 minutes, stirring occasionally, until the tomatoes soften and burst naturally, releasing their juices.
Lightly mash some of the tomatoes with the back of a spoon to create a thicker sauce while leaving others whole for texture.
Stir in the chopped basil, butter (if using), and Parmesan cheese until well combined.
Add the cooked pasta to the skillet, tossing gently. If needed, add a splash of the reserved pasta water to create a silky, glossy sauce. Garnish with fresh basil and extra Parmesan before serving.
