Ingredients
  

For the Adobo Chicken

  • 700 g boneless, skinless chicken thighs
  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar or white vinegar
  • 5 garlic cloves, finely minced
  • 1 teaspoon black peppercorns
  • 1 tablespoon brown sugar
  • 1/2 cup water or chicken stock
  • 1 tablespoon cooking oil
  • 1/2 teaspoon smoked paprika, optional

For the Tacos

  • 8 small flour or corn tortillas
  • 1 cup finely shredded cabbage
  • 1 avocado, sliced
  • 1/3 cup fresh cilantro, chopped
  • 1 jalapeño, thinly sliced, optional
  • 1 lime, cut into wedges

Instructions
 

  • Pat the chicken thighs dry with paper towels. Season lightly with black pepper, keeping in mind that soy sauce will provide plenty of salt.
  • Heat the oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and sear for approximately 2–3 minutes per side until lightly browned. Remove the chicken and set aside.
  • Add the sliced onion and minced garlic to the same pan. Cook for 1–2 minutes until fragrant. Avoid burning the garlic.
  • Add the soy sauce, vinegar, water or chicken stock, brown sugar, bay leaves, peppercorns, and smoked paprika if using. Stir gently to combine.
  • Return the chicken to the pan. Bring the liquid to a gentle simmer, then reduce the heat. Cover partially and cook for approximately 25–30 minutes, turning the chicken occasionally.
  • Once the chicken is tender and thoroughly cooked, transfer it to a plate. Remove the bay leaves and peppercorns if desired. Shred the chicken using two forks.
  • Whisk together Greek yogurt or sour cream, lime juice, honey, and a pinch of salt. Adjust the lime and sweetness according to taste.
  • Warm the tortillas in a dry skillet for approximately 20–30 seconds per side. Keep them covered with a clean kitchen towel so they remain soft.
  • Fill each tortilla with shredded adobo chicken. Top with cabbage, red onion, avocado, cilantro, and jalapeño if desired. Drizzle with lime sauce and finish with fresh lime juice.
  • Serve immediately while the chicken and tortillas are warm.

Notes

  • Chicken thighs: Boneless chicken thighs are ideal because they remain tender and flavorful during simmering.
  • Vinegar: Rice vinegar gives a slightly softer acidity, while white vinegar provides a sharper traditional-style tang.
  • Soy sauce: Use regular or reduced-sodium soy sauce according to your preference.
  • Tortillas: Both corn and flour tortillas work well; choose whichever texture you prefer.
  • Sauce consistency: Reduce the adobo sauce enough to coat the shredded chicken without making it overly watery.
  • Toppings: Fresh toppings balance the rich and savory chicken.
  • Spice level: Add jalapeño, chili flakes, or hot sauce if you enjoy spicy tacos.
