Ingredients
  

  • 1 cup rice, rinsed
  • 500 g chicken (bone-in preferred)
  • 1 tablespoon cooking oil
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, sliced or grated
  • 6 cups chicken broth or water
  • 1 teaspoon fish sauce (optional)
  • Salt and pepper, to taste

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Sauté garlic, onion, and ginger until fragrant.
  • Add chicken and cook until lightly browned.
  • Stir in rice and mix well.
  • Pour in broth and bring to a boil.
  • Lower heat and simmer, stirring occasionally, until rice is soft and porridge-like.
  • Season with fish sauce, salt, and pepper.

  • Bone-in chicken adds more flavour.
  • Consistency can be adjusted with more broth.
  • Ginger is essential for authentic taste.
