Chicken Arroz Caldo (Chicken Rice Porridge): A Comforting

Shruthi
Chicken Arroz Caldo is a creamy and comforting rice porridge made by simmering rice and chicken in a flavorful ginger-infused broth. The rice slowly breaks down during cooking, creating a thick and velvety texture that feels warm and soothing. Aromatics like garlic, onion, and ginger give the dish its signature fragrance and depth of flavor.

Ingredients

  • 1 tablespoon cooking oil
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons fresh ginger, minced
  • 1 cup uncooked rice (short-grain preferred)
  • 6 cups chicken broth or water
  • ½ teaspoon black pepper
  • Salt to taste

Instructions

  • Heat oil in a large pot over medium heat. Add garlic, onion, and ginger. Sauté until fragrant and slightly golden.
  • Add the chicken pieces to the pot and cook for about 5 minutes until lightly browned.
  • Stir in the rinsed rice and cook for 1–2 minutes, allowing the grains to absorb the flavors.
  • Pour in chicken broth and bring the mixture to a boil. Reduce heat to low and simmer for 30–40 minutes, stirring occasionally until the rice becomes soft and creamy.
  • Remove chicken, shred the meat, and return it to the pot.
  • Add fish sauce, pepper, and salt to taste. Serve hot with boiled eggs, fried garlic, and green onions.

Notes

  • Use bone-in chicken for richer flavor.
  • Stir occasionally to prevent the rice from sticking.
  • Add more broth if the porridge becomes too thick.
  • Fresh ginger is essential for authentic flavor.
  • Short-grain rice produces a creamier texture.
  • Fish sauce adds umami depth.
  • The dish thickens as it cools.
  • Garnishes enhance both taste and presentation.
