Chicken Biryani Hyderabadi Style

Ingredients
  

For the Chicken Marinade

  • 1 kg chicken, preferably bone-in pieces
  • 1 cup thick yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1½ teaspoons garam masala
  • 1 teaspoon coriander powder
  • 1½ teaspoons salt, or to taste
  • ½ cup fresh coriander leaves, chopped
  • ½ cup fresh mint leaves, chopped
  • 2 tablespoons fried onions

For the Rice

  • 4 cups long-grain basmati rice
  • 8–10 cups water
  • 2 bay leaves
  • 4 green cardamom pods
  • 4 cloves
  • 1 star anise
  • 1 teaspoon cumin seeds
  • 1–2 black cardamom pods
  • 2 tablespoons salt, or as needed

For Layering

  • ¼ cup fresh mint leaves
  • ¼ cup fresh coriander leaves
  • 2–3 tablespoons ghee
  • ¼ cup warm milk
  • ½ teaspoon saffron strands
  • 1 tablespoon kewra water, optional

Instructions
 

Marinate the Chicken

  • Place the chicken in a large bowl. Add yogurt, ginger-garlic paste, green chilies, lemon juice, turmeric, chili powder, garam masala, coriander powder, salt, mint, coriander, oil, and fried onions.
    Mix thoroughly until every piece of chicken is coated.
    Cover and refrigerate for at least 1–2 hours. For deeper flavor, you can marinate it overnight.

Prepare the Fried Onions

  • Thinly slice the onions.
    Heat oil in a deep pan and fry the onions over medium heat until golden brown and crisp. Remove them immediately because they continue cooking from residual heat.
    Drain on a paper towel and keep aside.

Prepare the Saffron Milk

  • Warm the milk gently. Add saffron strands and let them steep for 10–15 minutes.
    This creates a beautiful golden color and gives the biryani a delicate floral aroma.

Parboil the Rice

  • Wash the basmati rice several times until the water becomes relatively clear. Soak the rice for about 20–30 minutes.
    Bring a large pot of water to a rolling boil. Add salt, bay leaves, cinnamon, cardamom, cloves, star anise, cumin, black cardamom, and lemon juice.
    Add the drained rice.
    Cook until the rice is approximately 70% cooked. The grain should be soft on the outside but still have a firm center.
    Drain immediately.

Layer the Biryani

  • Place the marinated chicken at the bottom of a heavy-bottomed pot.
    Spread some mint, coriander, and fried onions over the chicken.
    Add the partially cooked rice in an even layer.
    Top with the remaining fried onions, mint, coriander, saffron milk, ghee, and optional kewra or rose water.

Seal the Pot

  • Cover the pot tightly with a lid. You can seal the edges with dough if desired.
    Place the pot over medium heat for approximately 5–7 minutes to build steam.
    Then reduce the heat to very low and cook on dum for about 35–45 minutes, depending on the size of the chicken pieces and your cookware.

Rest Before Serving

  • Turn off the heat and allow the biryani to rest, covered, for 10–15 minutes.
    Open the lid carefully. Gently fluff the biryani from the sides using a wide spoon, taking care not to break the rice grains.
    Serve hot.

Notes

  • Use aged basmati rice for long, separate, aromatic grains.
  • Bone-in chicken generally produces more flavorful biryani than boneless chicken.
  • Do not overcook the rice during the boiling stage because it will continue cooking during dum.
  • Thick yogurt works better than watery yogurt for the marinade.
  • Fried onions add sweetness, texture, and authentic biryani flavor.
  • Saffron is optional but gives the biryani a luxurious aroma and appearance.
  • A heavy-bottomed pot helps prevent the chicken from burning during dum cooking.
  • Always rest the biryani before mixing and serving.
