  • 2 cups cooked shredded chicken (grilled or rotisserie)
  • 1/3 cup Caesar dressing (plus extra for serving)
  • 6 small flour or corn tortillas
  • 1 cup shredded romaine lettuce
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella (optional, for melting)
  • 1 tbsp olive oil or butter (for cooking)
  • Freshly cracked black pepper, to taste

Instructions
 

  • Prepare the Chicken: In a bowl, mix shredded chicken with Caesar dressing until evenly coated.
  • Heat the Tortillas: Lightly brush each tortilla with olive oil and place on a heated skillet.
  • Add Filling: Spoon a portion of chicken onto one side of the tortilla, sprinkle mozzarella (optional), and press lightly.
  • Smash and Cook: Using a spatula, press (or “smash”) the tortilla flat until crispy and golden on one side, about 2–3 minutes per side.
  • Assemble the Taco: Fill with romaine lettuce, Parmesan cheese, and a drizzle of Caesar dressing.
