Ingredients
  

  • 4 chicken thighs or drumsticks
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 onion (chopped)
  • 3 garlic cloves (minced)
  • 1½ cups mushrooms (sliced)
  • ½ cup dry white wine
  • 1 cup diced tomatoes (or canned tomatoes)
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • Fresh parsley (for garnish)

Instructions
 

  • Season chicken with salt and pepper.
  • Heat olive oil and butter in a large pan.
  • Brown the chicken on both sides until golden, then remove and set aside.
  • In the same pan, sauté onions and garlic until soft.
  • Add mushrooms and cook until they release moisture and brown slightly.
  • Stir in tomatoes, tomato paste, chicken broth, thyme, and bay leaf.
  • Adjust seasoning and remove bay leaf.
  • Garnish with fresh parsley and serve hot.
