Ingredients
  

For Crepes:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 ½ cups milk
  • 2 tbsp melted butter
  • ¼ tsp salt

For Chicken Filling:

  • 2 cups cooked chicken (shredded or diced)
  • 2 tbsp olive oil or butter
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup mushrooms (optional)
  • ½ tsp dried thyme
  • ½ tsp oregano
  • Salt and pepper to taste

For Riviera Cream Sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Fresh parsley or basil (chopped)

Instructions
 

  • Whisk flour, eggs, milk, butter, and salt into a smooth batter.Heat a non-stick pan and pour a thin layer.
  • Cook for 1–2 minutes per side until lightly golden.Stack and set aside.
  • Heat oil or butter in a pan.Sauté garlic and onions until soft.
  • Add mushrooms and cook until tender.Stir in chicken, herbs, salt, and pepper.Cook for 3–4 minutes and set aside.
  • Melt butter and whisk in flour to form a roux.Slowly add milk and cream, stirring constantly
  • Add cheese, lemon zest, and juice.Stir until smooth and creamy.Mix in fresh herbs
  • Combine chicken with some sauce.Spoon filling into each crepe.
  • Roll or fold neatly.Place in a baking dish, top with extra sauce and cheese.Bake at 180°C (350°F) for 10–15 minutes (optional).
