Ingredients
  

  • 4 chicken pieces (thighs or drumsticks)
  • Salt and black pepper (to taste)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 carrots (sliced)
  • 1 cup mushrooms (sliced)
  • 2 tablespoons all-purpose flour
  • ½ cup dry white wine
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • Fresh parsley (for garnish)

Instructions
 

  • Season the chicken with salt and pepper.
  • Heat butter and olive oil in a large pan.
  • Lightly sauté the chicken without browning too much, then remove and set aside.
  • In the same pan, sauté onion and garlic until soft.
  • Add carrots and mushrooms, cooking for a few minutes.
  • Sprinkle flour and stir to form a light roux.
  • Pour in white wine and let it reduce slightly.
  • Add chicken broth, thyme, and bay leaf.
  • Return chicken to the pan and simmer for 25–30 minutes.
  • Stir in cream, cook for a few more minutes, and garnish with parsley before serving.
