For the Chicken
- 700 g boneless, skinless chicken thighs, cut into large pieces
- 1 tablespoon vegetable oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Aromatic Spice Paste
- 5 shallots, roughly chopped
- 4 garlic cloves
- 1-inch piece fresh ginger
- 1-inch piece fresh turmeric, or 1 teaspoon ground turmeric
- 2 red chilies, seeded for less heat
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- 2 tablespoons water, as needed
For the Coconut Sauce
- 400 ml full-fat coconut milk
- 150 ml chicken stock or water
- 1 stalk lemongrass, bruised
- 2 kaffir lime leaves, optional
- 1 tablespoon sweet soy sauce
- 1 teaspoon brown sugar or palm sugar
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 tablespoon fresh lime juice
For Finishing
- 2 tablespoons chopped fresh cilantro or coriander
- 1 spring onion, thinly sliced
- Fresh red chili slices
- Lime wedges
- Fried shallots, optional
Prepare the Chicken
Pat the chicken pieces dry with paper towels.Season them lightly with salt and black pepper.Using chicken thighs gives the finished dish a particularly tender and juicy texture, but chicken breast can also be used.
Make the Spice Paste
Add the shallots, garlic, ginger, turmeric, red chilies, coriander, cumin, and water to a food processor or blender.Blend until a relatively smooth aromatic paste forms.If you do not have a food processor, finely mince all the ingredients and combine them thoroughly.
Brown the Chicken
Heat the vegetable oil in a large deep skillet or Dutch oven over medium-high heat.Add the chicken pieces in a single layer.Cook for approximately 2–3 minutes per side, until lightly golden.The chicken does not need to be completely cooked at this stage.Transfer it to a plate and set aside.
Fry the Aromatics
Reduce the heat to medium.Add the prepared spice paste to the same pan.Cook for approximately 4–6 minutes, stirring frequently.The mixture should become fragrant and slightly darker.This step is important because gently frying the spice paste develops a deeper flavor.
Add the Coconut Milk
Slowly pour in the coconut milk while stirring.Add the chicken stock or water.Stir well to combine the coconut milk with the aromatic spice mixture.
Add the Aromatics and Seasoning
Add the bruised lemongrass and kaffir lime leaves.Stir in the sweet soy sauce, brown sugar, salt, and black pepper.Bring the sauce to a gentle simmer.
Return the Chicken
Place the browned chicken pieces back into the sauce.Make sure the chicken is partially submerged.Reduce the heat to low and cover the pan loosely

Simmer gently for approximately 20–25 minutes, stirring occasionally.The chicken should become tender and fully cooked, while the coconut sauce gradually thickens and becomes rich and fragrant.Avoid vigorous boiling because high heat can cause coconut milk to separate.
Adjust the Sauce
Remove the lemongrass and kaffir lime leaves.Taste the sauce.Add more salt for savoriness, a little palm sugar for sweetness, or additional chili for heat.If the sauce is too thick, add a small amount of warm water.If it is too thin, simmer uncovered for several additional minutes
Add Lime Juice
Turn off the heat.Stir in the fresh lime juice.The acidity cuts through the richness of the coconut milk and makes the flavors brighter.
Garnish and Serve
Transfer the chicken and coconut sauce to a serving bowl.Garnish with fresh cilantro, spring onions, sliced red chilies, and fried shallots.Serve immediately with steamed rice and lime wedges.
