Ingredients

  • 4 large potatoes
  • 4 cloves garlic
  • 1/4 cup butter
  • 1/2 cup milk
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 bunch asparagus
  • 2 tbsp olive oil
  • 1 cup Arborio rice
  • 1 lemon
  • 4 cup chicken broth
  • 1/2 cup Parmesan cheese
  • 2 tbsp butter
  • 2 cloves garlic
  • 1/4 cup fresh herbs
  • 1 pound green beans
  • 1 loaf French bread

Instructions

  • Creamy Garlic Mashed Potatoes
Boil the potatoes in salted water until tender, then drain and mash.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant.
Add the garlic butter mixture, milk, salt, and pepper to the mashed potatoes. Mix until creamy and well combined.
  • Roasted Asparagus with Lemon
Preheat the oven to 400°F (200°C).
Place the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper.
Roast in the preheated oven for 10-12 minutes, or until tender and slightly crispy.
Remove from the oven and sprinkle with lemon zest. Serve with lemon wedges on the side.
  • Parmesan Herb Risotto
In a large saucepan, heat the chicken broth until simmering.
In another large saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant.
Add the Arborio rice to the saucepan and cook for 1-2 minutes, stirring constantly.
Begin adding the simmering chicken broth to the rice, 1/2 cup at a time, stirring constantly until absorbed. Continue this process until the rice is creamy and cooked through (about 20-25 minutes).
Stir in the grated Parmesan cheese and chopped fresh herbs. Season with salt and pepper to taste.
  • Garlic Butter Green Beans
Bring a pot of salted water to a boil. Add the trimmed green beans and blanch for 2-3 minutes, or until bright green and tender-crisp. Drain and set aside.
In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant.
Add the blanched green beans to the skillet and toss to coat in the garlic butter mixture. Season with salt and pepper to taste.
ook for an additional 2-3 minutes, or until heated through.
  • Rustic Garlic Bread
Preheat the oven to 375°F (190°C).
In a small bowl, mix together the softened butter, minced garlic, chopped fresh parsley, and salt until well combined.
Spread the garlic butter mixture onto the sliced French bread.

Notes

Consider the timing and preparation order of the side dishes to ensure everything is ready to serve at the same time as the Chicken Marsala. Start with the dishes that require longer cooking times, such as the Parmesan Herb Risotto, and work your way to the quicker sides like the Roasted Asparagus with Lemon. Feel free to customize the side dishes based on your preferences and dietary restrictions. For example, you can use dairy-free alternatives for lactose-intolerant individuals or adjust the seasoning to suit your taste.
