Ingredients
  

  • 2 Cups Cooked chicken, diced
  • 2 Cups Frozen mixed vegetables
  • 1 medium Onion chopped
  • 2 medium Carrots chopped
  • 2 Stalks Celery chopped
  • 4 Tbsp Butter
  • 1/3 Cup All-purpose flour
  • 2 Cups Chicken broth
  • 1 Cup Milk
  • 1 Tbsp Salt
  • 1/2 Tbsp Pepper
  • 2 Sheets Puff pastry sheets

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté until the vegetables are tender.
  • Sprinkle the flour over the sautéed vegetables and stir well to coat. Cook for a minute or two to remove the raw flour taste.
  • Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Continue stirring until the mixture thickens and comes to a gentle boil.
  • Add the diced chicken and frozen mixed vegetables to the skillet, stirring to combine. Season with salt and pepper to taste.
  • Remove the skillet from the heat and let the filling cool slightly.
  • Roll out one sheet of puff pastry and line the bottom of a pie dish with it, trimming any excess dough.
  • Pour the chicken and vegetable filling into the pie dish.
  • Roll out the second sheet of puff pastry and place it on top of the filling, sealing the edges with the bottom crust.
  • Cut a few slits on the top crust to allow steam to escape.
  • Place the pie dish on a baking sheet to catch any potential spills, and bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove from the oven and let the chicken pot pie cool for a few minutes before serving.
