Ingredients
  

For the Chicken Souvlaki

  • 2 chicken breasts or thighs, cubed
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper to taste

For the Salad

  • 4 cups romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives
  • ½ cup feta cheese, crumbled

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions
 

  • Mix olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Add chicken and marinate for at least 1–2 hours.
  • Grill or pan-sear the chicken over medium-high heat for 6–8 minutes until golden and fully cooked.
  • In a large bowl, combine greens, tomatoes, cucumber, red onion, and olives.
  • Whisk together olive oil, lemon juice, mustard, honey, garlic, salt, and pepper until emulsified.
  • Add warm chicken on top of the salad and drizzle with dressing. Sprinkle feta cheese.
  • Serve immediately while the chicken is warm for best flavor.
