Ingredients
  

  • 2 cups cooked penne or rotini pasta
  • 2 cups shredded cooked chicken
  • 2 cups fresh spinach leaves
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 ½ cups heavy cream or milk
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • ½ teaspoon Italian seasoning

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • In a skillet, heat olive oil and sauté garlic until fragrant.
  • Add spinach and cook until wilted, then remove from heat.
  • In a bowl, combine chicken, cooked pasta, cream, ricotta, and seasoning.
  • Mix in spinach and half of the mozzarella and Parmesan cheese.
  • Transfer the mixture to the prepared baking dish.
  • Top with remaining cheese and bake for 25–30 minutes, until bubbly and golden.
  • Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for convenience.
  • Substitute ricotta with cream cheese for extra creaminess.
  • Add mushrooms or bell peppers for extra texture.
  • For a lighter version, use low-fat cheese and milk.
  • Leftovers can be stored for up to 3 days in the refrigerator.
