Ingredients
  

  • 1 ½ lbs boneless chicken breasts (or thighs)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup corn (frozen or canned)
  • 1 cup black beans, drained
  • 1 cup shredded cheddar or Mexican cheese
  • 1 cup diced tomatoes (optional)
  • 1 small onion, chopped (optional)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place chicken in a baking dish.
  • Sprinkle taco seasoning evenly over the chicken.
  • Add salsa, corn, beans, tomatoes, and onion on top.
  • Pour chicken broth into the dish.
  • Cover with foil and bake for 30 minutes.
  • Remove foil, shred the chicken, and mix everything together.
