Ingredients
  

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeño, chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup corn kernels
  • 1 can (15 oz) black beans, drained
  • Salt and pepper to taste
  • 6 corn tortillas, cut into strips and fried until crispy
  • Optional toppings: avocado, lime wedges, shredded cheese, cilantro

Instructions
 

  • Heat oil in a pot and sauté onion, garlic, and jalapeño.
  • Add chili powder, cumin, and stir until fragrant.
  • Stir in diced tomatoes, broth, chicken, corn, and beans.
  • Simmer for 20 minutes to blend flavors.
  • Season with salt and pepper.
  • Serve hot, topped with crispy tortilla strips and optional garnishes.

  • Use rotisserie chicken for a quick version.
