For the Soup

- 1 medium yellow onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeño, seeded and finely chopped

- 1 teaspoon smoked paprika
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 bay leaf
- 1 tablespoon tomato paste
- 1½ pounds boneless, skinless chicken breasts or thighs
- 1 cup frozen or fresh corn kernels
- 1 cup water
- 4 cups low-sodium chicken broth
- 1 can (14–15 ounces) fire-roasted diced tomatoes
For the Charred Corn
- 1 cup corn kernels
- 1 teaspoon olive oil
- ¼ teaspoon smoked paprika
- Pinch of salt
- Pinch of black pepper
For the Crispy Tortilla Strips
- 6 small corn tortillas
- 1 tablespoon olive oil
- ¼ teaspoon chili powder

Prepare the Vegetables
Wash and prepare all the vegetables.Finely chop the onion, dice the red bell pepper, and finely chop the jalapeño.Mince the garlic and set everything aside.
Prepare the Charred Corn
Heat a large skillet over medium-high heat.Add 1 teaspoon olive oil followed by the corn kernels.Sprinkle with smoked paprika, salt, and black pepper.Cook for approximately 5–7 minutes, stirring occasionally, until the corn develops golden-brown and lightly charred spots.Transfer the charred corn to a bowl and set aside.
Sauté the Aromatics
Heat 2 tablespoons olive oil in a large soup pot or Dutch oven over medium heat.Add the chopped onion and bell pepper.Cook for approximately 5–6 minutes, stirring occasionally, until the vegetables soften.
Add the Jalapeño and Garlic
