Chicken Vindaloo is a spicy and tangy curry with Goan-Portuguese culinary roots.Chicken is marinated with vinegar, garlic, ginger, and aromatic spices.Dried red chilies provide the characteristic color and heat.Whole spices are ground into a flavorful Vindaloo masala.Slow cooking allows the chicken to absorb the rich, tangy sauce.Serve hot with steamed rice, naan, pulao, or Goan bread.

Ingredients
  

For the Chicken

  • 1 kg chicken, bone-in or boneless
  • 2 tablespoons vinegar
  • 1 teaspoon salt
  • ½ teaspoon turmeric powder

For the Vindaloo Masala

  • 8–12 dried red chilies, preferably Kashmiri chilies for color
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 5–6 cloves
  • 1-inch cinnamon stick
  • ½ teaspoon mustard seeds
  • 8–10 cloves garlic
  • 1-inch piece ginger
  • 2 tablespoons vinegar
  • 2–3 tablespoons water, as needed

For the Curry

  • 3 tablespoons cooking oil
  • 2 large onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 tablespoon sugar or jaggery, optional
  • 1 cup water, or as needed
  • Salt to taste
  • 2 tablespoons fresh coriander leaves, chopped

Instructions
 

Marinate the Chicken

  • Place the chicken in a large bowl.
    Add vinegar, salt, and turmeric powder. Mix thoroughly so every piece is coated.
    Cover and refrigerate for at least 2 hours. For maximum flavor, marinate overnight

Prepare the Vindaloo Masala

  • Remove the stems from the dried chilies and shake out some seeds if you prefer a milder curry.
    Dry-roast the coriander seeds, cumin seeds, peppercorns, cloves, cinnamon, cardamom, and mustard seeds over low heat for 1–2 minutes until fragrant.
    Allow them to cool.
    Transfer the roasted spices to a blender. Add dried chilies, garlic, ginger, turmeric, vinegar, and a little water.
    Blend into a smooth, thick paste.

Cook the Onions

  • Heat oil in a heavy-bottomed pan over medium heat.
    Add the chopped onions and sauté until golden brown.
    Do not rush this step because properly browned onions provide sweetness and depth to the curry.

Fry the Vindaloo Masala

  • Add the prepared spice paste to the onions.
    Cook over medium-low heat for approximately 5–8 minutes, stirring frequently.
    Cook until the raw aroma disappears and the oil begins to separate from the masala.

Add the Chicken

  • Add the marinated chicken and stir well to coat each piece with the masala.
    Cook uncovered for approximately 8–10 minutes, turning the chicken occasionally.
    Add the chopped tomatoes and cook until they soften completely and blend into the masala.
    If the mixture becomes too dry, add a small splash of water.

Slow Cook

  • Add approximately 1 cup of water and season with salt.
    Cover and simmer over low to medium-low heat until the chicken becomes tender and fully cooked.
    This usually takes 25–35 minutes, depending on the size and type of chicken pieces.

Balance the Flavor

  • Taste the curry.
    For a traditional Vindaloo-style flavor, the curry should have a noticeable spicy, tangy, garlicky character.
    If you prefer a slightly sweeter balance, add a small amount of sugar or jaggery.
    Simmer uncovered for another 5 minutes until the sauce reaches your preferred consistency.
    Garnish with fresh coriander and serve hot.

Notes

  • Vinegar is one of the defining ingredients of Vindaloo, so avoid eliminating it completely.
  • Kashmiri dried chilies provide beautiful color without making the curry excessively hot.
  • Use less chili if you prefer a milder version.
  • Bone-in chicken generally produces a richer curry.
  • Marinating overnight creates deeper flavor.
  • Freshly roasted and ground spices give the best aroma.
  • Avoid burning the spice paste because it can make the curry bitter.
  • Vindaloo often tastes even better after resting because the flavors continue to develop.
